Stevie's Sweet Burgers

Description
This is a new twist on an old favorite. We've taken the traditional lean ground beef burger and packed in some punch with some unlikely players like shredded sweet potato and black beans. When you add in a few other ingredients like red and green peppers and one lone jalapeno, the spices are right for a main dish nothing short of spectacular! One student told us, "You should call this burger "Kaboom" because that's what my taste buds are saying!

Ingredients

| Sweet Potato, shredded | 1 medium | 6 medium |
| Green Bell Pepper, diced | 1/4 cup | 1 1/2 cups |
| Red Bell Pepper, diced | 1/4 cup | 1 1/2 |
| Onion Powder | 2 teaspoons | 1/4 cup |
| Garlic, minced | 1 teaspoon | 2 tablespoons |
| Large Egg | 1 | 6 |
| Paprika | 1 teaspoon | 2 tablespoons |
| Jalapeno pepper, seeds and veins removed, diced | 1 | 6 |
| Canned Black Beans, rinsed and drained | 1/2 cup | 3 cups |
| Whole Wheat Buns | 8 | 50 |
Preparation
Preheat oven to 350 degrees. In a large mixing bowl, mix all ingredients together and form in to 2-ounce patties. Place on large baking sheets and bake to 160 degrees internal temperature approximately 8-10 minutes. Remove from baking sheet and place one patty in each whole wheat bun.
