Tri Bean Good

Description
This flavorful twist on an old standard is enhanced with a fragrant citrus dressing. White, red and chick peas are cooked till tender, then bathed in a dressing made with orange and sage. This would be used as a side dish.

Preparation
Soak beans overnight to reduce cooking time. Next day, drain beans and cook until tender. Meanwhile prepare dressing. Whisk olive oil, orange juice, honey, vinegar. Chop shallots and garlic and parsley and add to dressing. After beans have finished cooking, drain and run under cold water till completly cooled. Toss with dressing and garnish with additionally chopped parsley.
