Berry Delicious Salad

Description
A mix of fresh greens, with strawberries, cranberries, thinly sliced red onion and finished off with a flavorful raspberry poppy seed dressing. May use any form of fruit such as pears, apples, blueberries etc..... which is in season. Grilled chicken and roasted almonds may be added to salad to use as a main entree.

| Strawberries slice | 1.5 cups | 12.5 cups/5 lb |

| Red onion, thinly slice | .25 cups | 2 cups |
| L/F Mayonnaise | .5 cups | 4.25 cups |
| Raspberry vinegar | 1 Tbls | 8.25 Tbls |
| Poppy Seed | 1 Tbls | 8.25 Tbls |
| L/F Milk | .25 cup | 2 cups |
| Sugar | .25 cup | 2 cups |
Preparation
Combine and mix romaine and spinach in a pan(6 serv use a 4' 1/2 meduim and 50 serv use a 6' full deep. Lay strawberries, cranberries and red onion on top of mixed greens. Refrigerate salad at 35 to 40 degrees until ready to serve.
Mix remaining ingredients(mayo,raspberry vinegar, sugar, poppy seed and milk) together. Whish until smooth. Keep refrigerated at 35 to 40 degrees until ready to serve.
Serving time, toss salad with dressing to evenly coat and serve with tongs.
CCP: hold for service at 41 degrees or below.
