Mighty Bread

It's easy to eat your whole grains when they taste as good as the Mighty Bread. This moist, aromatic bread is nutrient packed- filled with whole grains, fruits, and pumpkin seeds. Every bite of mighty bread is a taste and texture sensation with juicy and tart cranberries, sweet apple sauce, crunchy and salty pumpkin seeds, chewy oats, and spicy nutmeg. Mighty Bread is balanced in both flavor and nutrition and makes a satisfying snack or a healthy and delicious side dish at any meal. It is also versatile, the dough can be baked and cut into portions (like a brownie) or portioned individually in muffin tins or molds.

This recipe was created by a 7th grade class (G37). Each week this class bakes different granola bars to sell at the store school as a healthy alternative to the other foods sold. They donate their profit to the charity of their choice. G37 was extremely excited to submit their healthy recipe to the contest. However, the recipe G37 uses for their granola bars did not fit into the nutritional requirements for this contest. So, with the help of Jarrett Stein and Danielle Magee, G37 adapted their recipe to create the Mighty Bread.

The Mighty Bread recipe is very simple. Start by mixing together the dry ingredients (rolled oats, whole wheat flour, whole corn flour, pumpkin seeds, cranberries, nutmeg) in a large metal bowl. Next, spread the dry ingredients to the outer edge of the bowl creating a space in the center of the bowl to add the wet ingredients. One at a time, add the wet ingredients to the middle of the bowl (apple sauce, apple juice, canola oil, vanilla extract). Using a large spoon or spatula, fold the ingredients together until they are evenly distributed. It is important to fold the ingredients so all the seeds and cranberries won't settle at the bottom.

Portion our servings depending on the size of the batch and the intended shape of the bread. For our recipe, we started with a batch to make 9 servings (recipe below). So, after we mixed the dough we portioned it out evenly into 9 baking molds. To make a bread, pour the dough into a bread mold and then once baked, portion it out into the appropriate amount of servings by slicing. Also, the Mighty Bread can be baked in muffin tins which require even portioning depending on the size of the whole recipe made (i.e. if you follow the recipe to make 50 servings of Mighty Bread then you would evenly distribute the dough into 50 muffin tins).

The Mighty Bread bakes in a preheated 400 degree oven for 20 minutes.
