Irresistible, brillantly colored autumn inspired roasted vegetable medley side dish, seasoned with fresh aromatic herbs with a subtle taste of maple.

Toss the sweet potatoes, butternut squash, carrots and onions in a large bowl or hotel pan with oil and salt.
Spread vegetables on a parchment-covered (18" x 26" x 2-1/2") sheet pan in a single layer. (For 50 servings use two sheet pans.)
Roast in a conventional oven at 425 degrees Fahrenheit for 30 minutes, turning vegetables once.
For 6 servings: In a small bowl, combine the apples, herbs and garlic. For 50 servings: In a large bowl, combine the apples, herbs and garlic.
Remove vegetables from oven, lower heat to 400 degrees Fahrenheit and combine apple mixture with the vegetables. Return to the oven and roast 20 minutes more.
Remove veetables from oven, drizzle the vegetables with 2 tsp maple syrup (for 6 servings) or 7 Tbsp (for 50 servings); toss to coat. Return to the oven and roast for 10 minutes.
CCP: Heat to 135 degree Fahrenheit or more.
Remove vegetables from the oven and gently toss in the spinach leaves.
Mix in the cranberries.
CCP: Hold for hot service at 135 degrees F or more.
