Ingredients

| barbecue sauce | 6 oz | 50 oz. |
| chopped mozzarella cheese | 3 oz. | 1.5 lbs. |
| 8" whole wheat tortilla | 6 ea. | 50 ea. |
| catsup | 3.5 oz. | 30 oz. |
| water | 1.75 cup | 15 oz. |
| dry onions | 1 tsp | 1/4 cup |
| barbecue spice | 1/2 tsp | 2 T |
| pepper | dash | 1 T |
| vinegar | 1/2 tsp | 2 T |
| Worcestershire sauce | 1/4 tsp | 1 oz. |
| margarine | 1 tsp | 1/4 cup |
| brown sugar | 1.5 tsp | 1 cup |
Preparation
Heat diced chicken to 165 degrees F.
Heat barbecue sauce to 150 degrees F.
To assemble:
Place tortillas on a sheet pan
Place 1.5 oz. diced chicken on one half of the tortilla
Ladle 1 oz. barbecue sauce on chicken.
Place 1/2 oz. chopped mozzarella on sauce. For 50 servings place 1 T. chopped mozzarella on the sauce.
Fold tortilla over the chicken/barbecue sauce/cheese but do not cover the chicken/sauce/cheese entirely. Leave approximately 1/2 inch of the chicken/sauce/cheese showing to give "eye appeal" to the quesadilla.
Slice the quesadilla into 3 wedges.
