Kickin' Chicken Chili

Description

Slightly spicy and always tasty white bean chili with chicken.  This hearty and healthy main dish includes colorful fresh peppers and onion in a flavorful broth.

Ingredients

Ingredient 6 servings 50 servings
oil1/8 cup1 cup
fresh diced onion1 oz1/2 lb.
fresh diced red pepper1 oz.1 lb.
fresh diced green pepper1 oz.1 lb.
canned chopped green chilies1 oz.1 cup
low sodium chicken base1 tsp1/4 cup
garlic powder1/8 tsp1 T.
cumin1/8 tsp1 T
parsley1/8 tsp1 T.
onion powder1/8 tsp2 tsp
chili powder1/4 tsp2.5 T.
black pepper1/8 tsp1 tsp
diced chicken7.25 oz.3.5 lbs.
Great Northern Beans1-15.5 oz can plus 1/2 cup1 #10 can plus 2 qts.
Hot tap water1/4 cup2 cups

Preparation

Saute onion, red pepper and green pepper in oil.

Add green chilies and combine.

Add chicken base to vegetables.

Add all spices to mixture and combine.

Add diced chicken and combine.

Add water to mixture.

Add 15.5 oz. can Great Northern Beans (undrained) to mixture and combine. For 50 servings, add 1 #10 can of Great Northern Beans (undrained) and combine.

Add 1/2 cup Great Northern Beans (drained) to mixture and combine. For 50 servings, add 2 qts. of Great Northern Beans (drained) and combine.

Heat to 165 degrees F.

Do not over cook because liquid will evaporate.
