Kickin' Chicken Chili

Description
Slightly spicy and always tasty white bean chili with chicken. This hearty and healthy main dish includes colorful fresh peppers and onion in a flavorful broth.

Ingredients

| fresh diced red pepper | 1 oz. | 1 lb. |
| fresh diced green pepper | 1 oz. | 1 lb. |
| canned chopped green chilies | 1 oz. | 1 cup |
| low sodium chicken base | 1 tsp | 1/4 cup |
| garlic powder | 1/8 tsp | 1 T. |
| cumin | 1/8 tsp | 1 T |
| parsley | 1/8 tsp | 1 T. |
| onion powder | 1/8 tsp | 2 tsp |
| chili powder | 1/4 tsp | 2.5 T. |
| black pepper | 1/8 tsp | 1 tsp |
| diced chicken | 7.25 oz. | 3.5 lbs. |
| Great Northern Beans | 1-15.5 oz can plus 1/2 cup | 1 #10 can plus 2 qts. |
| Hot tap water | 1/4 cup | 2 cups |
Preparation
Saute onion, red pepper and green pepper in oil.
Add green chilies and combine.
Add chicken base to vegetables.
Add all spices to mixture and combine.
Add diced chicken and combine.
Add water to mixture.
Add 15.5 oz. can Great Northern Beans (undrained) to mixture and combine. For 50 servings, add 1 #10 can of Great Northern Beans (undrained) and combine.
Add 1/2 cup Great Northern Beans (drained) to mixture and combine. For 50 servings, add 2 qts. of Great Northern Beans (drained) and combine.
Heat to 165 degrees F.
Do not over cook because liquid will evaporate.
