Luscious Vegetarian Tacos

You’ll get a protein punch in a fistful of flavor with these main dish vegetarian tacos. The appeal here is simple: it's familiar, healthy, inexpensive and tasty —all without a smidge of meat. Topped with a sprinkle of lettuce, cheese and tomato, even die-hard meat lovers will look forward to “Taco Day.”

|Olive Oil||1/2 tbsp||4 1/2 tsp|
|Chopped Onion||1/2 cup||4 1/2 cup|
|Chopped Garlic||2 cloves||25 cloves|
|Lentils||1/2 cup||4 1/2 cups|
|Chili Powder||1/2 tsp||4 tsp|
|Oregano, ground||1/2 tsp||4 tsp|
|Cumin, ground||1/2 tsp||4 tsp|
|Vegetable broth or water||1 1/4 cup||10 3/4 cups|
Follow proper handwashing procedures as indicated below:
Wet hands and forearms with warm, running water at least 100 degrees F and apply soap. Scrub lathered hands and forearms, under fingernails, and between fingers for at least 10-15 seconds. Rinse thoroughly under warm running water for 5-10 seconds. Dry hands and forearms thoroughly with single- use paper towels. Turn off water using paper towels. Use paper towel to open door when exiting the restroom.
Cook onions and garlic in olive oil for 3 minutes. Add the lentils and taco seasoning, cook for 2 minutes. Add the vegetable broth or water, bring to a boil, then simmer for 30 minutes or until lentils are soften.
