Crunchy and colorful, fresh and slightly sweet, Somerville’s Bright Broccoli Slaw is an exciting and unique side dish that will enhance any school lunch entrée.  It is the perfect combination of vegetables and fruit that is quick and easy to prepare and is guaranteed to please the pickiest of eaters.

Ingredients

Ingredient 6 servings 50 servings
Broccoli slaw7.25 oz3.75 lbs
Ramen noodles2 oz15 oz
Red onion, very finely diced2 TBSP + 1 TSP1.25 cups
Dried cranberries1/3 cup + 2 TBSP4 cups
Olive oil1 TBSP + 1 TSP1/2 cup + 2 TBSP
White wine vinegar2 TBSP + 1 TSP1.25 cups
Pineapple juice.25 cup2 cups
Granulated sugar1 TSP2.5 TBSP
Granulated garlic.25 TSP2.5 TSP
Granulated onion.25 TSP2.5 TSP
Black pepper, ground.125 TSP1.25 TSP

Preparation

Combine oil, vinegar, pineapple juice and seasonings in bowl and whisk together to prepare dressing. Add very finely diced onion and dried cranberries to dressing. Set aside and marinate for at least 1 hour. Crush ramen noodles into small pieces. Discard seasoning package! Combine broccoli slaw and ramen noodles. Add dressing and toss to combine.
