Ingredients

| Quinoa, dry, whole grain | 1 c+2 Tbsp/7.5 oz | 9 cups 3 oz/3.9 lb |
| water | 10 oz | 10 cups 3.5 oz |
| cinnamon, ground | 2 tsp | 5 1/2 tbsp |
| honey | 2.5 Tbsp | 1 1/3 cup |
| salt | 1/8 tsp | 1 tsp |
| apple, Granny Smith, chopped | 1 cup | 1 qt 1/3 cup |
Preparation
Bring water to boil in a large sauce pan. Add quinoa. Simmer covered, stirring occasionally, for approximately 10 minutes or until water is absorbed and it fluffs with a fork. Roast chopped apples in 300 degree oven until tender. Add roasted apples, cinnamon, salt, and honey to cooked quinoa and mix. Serve 1/2 cup per serving.
