Pasta & Cheese Orbit Rounds-

Creamy cheese and whole grain pasta rolled in seasoned bread crumbs to make a crunchy incrusted ball to excite anyone’s pallet. This childhood favorite with a new twist can be served as an entrée as well as a side.. Can be served with or without marinara dipping sauce.

Ingredients

Ingredient 6 servings 50 servings
Whole Wheat Elbow Pasta -cooked 2 2/3 cups1 1/2 Gal.
Vegetable Oil2 tbsp.1 1/4 cup
AP Flour1/4 cup2 1/2 cups
Low-fat Milk1 1/2 cups3 Quarts
Butternut Squash1 1/2 oz1 1/4 cup
Salt for both Mac & Cheese & Marinara 1/9tsp.2 tsp.
Tabasco sauce Dash1 tsp.
Low-fat Cheddar Cheese-orange2 1/2 oz2 1/2 cups
Egg wash a/na/n
Seasoned Panko Bread Crumbs a/na/n
Optional -Marinara sauce Canned diced Tomatoes 1 Can 1 can
Vegetable Oil 1/3 tbsp.3 tbsp.
White onions, small diced 2 oz3 cups
Garlic1/3 tbsp.3 tbsp.
Fresh basil, chopped1 1/2 oz1 1/2 cups

Preparation

Cook pasta in boiling water until well done. Cool under running water. While pasta is cooking, heat vegetable oil in a sauce pan or kettle over medium heat and stir in flour to make a roux. Stir roux constantly for about 4 minutes to cook out the flour flavor. Slowly stir in milk, and when possible, switch to a whisk. Whisk until smooth. Add in tabasco and seasonings. Heat to a simmer until a thick sauce is formed (about 15 minutes). Stir constantly to avoid burning. Puree butternut squash and add to the sauce. Remove from heat and mix in cheese. Mix cooked pasta and sauce. Place in a shallow hotel pan in the refrigerator and allow to cool. (This can be done the day before) Wearing gloves, form in balls with a #30 scoop and dip into egg wash, then into panko. Verify correct size with a scale periodically. Place on a sheet pan lined with parchment paper, spray with pan spray and cook in pre-heated 350 convection for about 15 minutes or until golden and crispy. Marinara Dipping Sauce- Place all ingredients except basil into hotel pan. and place in pre-heated 350 convection oven and cook for 15 minutes, or until onions are soft.
