Cheese Bread Sticks with Marinara

Description

Homemade pizza bread made from whole grain, combined with melted cheese and garlic butter and dipped in a rich marinara--nothing could please students more.  This is the cheese bread stick main dish with which Andersen students were "wowed."

Ingredients

Cornmeal, whole grain1.5 Tbsp1 cup

Preparation

Dissolve yeast in warm water. Let stand for 4-5 minutes. Place flours in large mixer bowl. Pour in dissolved yeast, oil, salt, basil, oregano, and sugar. Gradually work into flours using dough hook on low speed. Knead for 7-8 minutes at medium speed. Divide and shape dough into 5 balls (for 50 servings) at 2 lbs 4oz each. Let rest for 20 minutes in warm place. Spray 1/2 sheet pans (14X18X1) with pan spray. Sprinkle each pan with 3 Tbsp cornmeal. Place one dough ball in center of each pan. Flatten dough by rolling or spreading dough 1/2 inch thick to rim of pans. Prick dough with fork. Mix butter buds with water (1 tsp to 1 Tbsp water= 1 Tbsp mixture for 6 servings or 8.3 tsp to 8.3 Tbsp water for 50 servings). Brush butter buds mixture over each pan of dough. Sprinkle dough with 1 tsp garlic for 6 servings and 1 2/3 tsp over each pan for 50 servings. Let dough rise 20 minutes. Bake at 375 degrees F for 15 minutes until golden color. Spread 12 ounces of mozzarella cheese over each pan of baked bread sticks (7.25 oz for 6 servings). Place bread back in oven to melt cheese. Take out of oven. Cut each pan 10 x 2 (for 6 servings cut 12 slices). Serve 2 sticks per serving. Serve with 2 ounces (1/4 cup) marinara sauce heated to 140 degrees F.
