Sweet and Savory Swiss Chard Wraps

A spicy combination of toasted herbs that provides a delicate balance between the hearty bulgur and creamy yogurt creating a substantial grab n’ go meatless wrap.

Ingredient 6 servings 50 servings
vegetable oil1tsp1tbl
onions fresh chopped1 oz12 oz
green bell pepper chopped1/2 oz6 oz
chili powder1/3 tsp1tbl+1tsp
cumin, lightly toasted1/3 tsp1tbl+1tsp
garlic powder1/6 tsp2 tsp
red hot sauce1/3 tsp1 tbl
brown sugar packed1/2 tsp6 tbl
canned tomatoes crushed1 oz1 lb 13 oz
canned kidney beans1.3 oz3 lbs
bulgur no.32 oz12 oz
water 1/2 oz2 cups
yogurt plain low fat2 1/2 oz2 cups
fresh oregano1/2 tsp2 tbl
swiss chard12 leaves4 bunches

  1. Heat oil in heavy stock pot

  2. Add chopped onions and green peppers, saute 4-5 minutes, until vegetables are tender.

  3. Add chili powser, cumin, garlic powder, onion powder, salt, red hot sauce to the sauteed vegetables.

  4. Add brown sugar and tomatoes and simmer for 15 minutes uncovered.

  5. Add kidney beans, bulgur wheat and water and simmer 15 minutes longer.

  6. Add yogurt and blend well.

7.Clean and devein Swiss chard leaves. Steam them for 2 minutes, cool down in ice water bath.

  1. lay out Swiss chard leaf over lapping both sides of leaf without the vein.

  2. Fill leaf with 4 oz of chili in the lower third of leaf.

10 add fresh chopped oregano.

  1. Roll from bottom updwards. Fold over sides and continue to roll until wrat pscompletely enclosed.
