Oodles of Noodles

A colorful whole wheat pasta dish with oodles of healthy flavors!  Grape tomatoes that compliment the wilted greens of swiss chard flavored with basil and garlic.

Ingredient 6 servings 50 servings
Whole Wheat Pasta, Penna or Fusilli1 lb8 lbs
Swiss Chard, Stems removed, coarsely chopped1 bunch8 bunches
Garlic Cloves, minced31/2 cup
Basil, dried2 tsp1/4 cup
Grape Tomatoes, chopped with all the juice2 cups8 lbs
Vegetable Broth, low sodium3 cups1 1/2 gallons/192 oz
Olive Oil3 tbsp1 1/2 cups
Whole Wheat Flour3 tbsp1 1/2 cups
Sea Salt1 tsp2 tbsp
Pepper1/2 tsp1 tbsp



Cook pasta according to package directions.

Heat a large skillet to a medium heat, add 3 tablespoons of oil, swirl to coat. Add tomatoes, garlic, chard, basil, salt and pepper. Sauté until chard is wilted and tomatoes are soft and produce juice. Sprinkle flour over vegetables and stir until completely incorporated. Slowly whisk in the broth Continue to stir until sauce comes to a boil and thickens, about 5-8 minutes. Pour over pasta and serve.
