A colorful whole wheat pasta dish with oodles of healthy flavors! Grape tomatoes that compliment the wilted greens of swiss chard flavored with basil and garlic.

Whole Wheat Pasta, Penna or Fusilli | 1 lb | 8 lbs |
Swiss Chard, Stems removed, coarsely chopped | 1 bunch | 8 bunches |
Garlic Cloves, minced | 3 | 1/2 cup |
Basil, dried | 2 tsp | 1/4 cup |
Grape Tomatoes, chopped with all the juice | 2 cups | 8 lbs |
Vegetable Broth, low sodium | 3 cups | 1 1/2 gallons/192 oz |
Olive Oil | 3 tbsp | 1 1/2 cups |
Whole Wheat Flour | 3 tbsp | 1 1/2 cups |
Sea Salt | 1 tsp | 2 tbsp |
Pepper | 1/2 tsp | 1 tbsp |
Preparation
Directions:
Cook pasta according to package directions.
Heat a large skillet to a medium heat, add 3 tablespoons of oil, swirl to coat. Add tomatoes, garlic, chard, basil, salt and pepper. Sauté until chard is wilted and tomatoes are soft and produce juice. Sprinkle flour over vegetables and stir until completely incorporated. Slowly whisk in the broth Continue to stir until sauce comes to a boil and thickens, about 5-8 minutes. Pour over pasta and serve.
