Black Beans with 'Sneaky' Greens

This recipe can be served as prepared as a vegetable side dish or used to create a wide array of kid friendly foods!
Use as a base layer for fruit & veggie tacos by adding roasted pineapple and serving it on a tortilla; or perhaps as a base layer in fish tacos! Add crumbled turkey sausage and veggie stock to create a soup. Use it as the first layer on whole grain pizza dough, then sprinkle with low fat mozzarella cheese for a delicious vegetarian pizza. Add this and diced tomatoes & jalapeños to steamed brown rice for a wonderful version of Rice & Beans with Sneaky Greens The possibilities are endless but the payback is that kids receive this vitamin packed treat to help them build their bodies into a well built machine!

Ingredients

| Onion, coarsley chopped | 2 cup | 4 qts |
| Garlic, peeled | 2 tsp | 1/3 cup |

| Oil, Extra Virgin Olive Oil | 3 tbs | 1 1/2 cups |
| Water | 6 cups | 1.5 qts |
| Black beans, dry | 2 cups | 4 qts |
| Kale, trimmed w/o stem, finely chopped, loosely packed | 8 cups | 67 cups/8.5 lb |
Preparation
Make sofrito by blending together onions, garlic, salt & oil in a food processor to a puree. In a heavy bottomed pan sauté the sofrito lightly for 5 minutes, being careful not to brown it.
Add water and dry black beans. Simmer for 2 to 3 hours until the beans are tender.
Add finely chopped Kale greens for the last 20 minutes of cooking time.
Recipe preparation is the same regardless of number of servings.
Serve as a side dish with a tortilla triangle and small dollop of plain yogurt.
