Carrots, raw, diced3 2/3oz1lb, 14oz
Kale, raw, chopped4Tbsp+ 2 1/3tsp2 1/2 cu
Onions, frozen, chopped3 2/3oz1lb, 14oz
Celery, raw, chopped3 2/3oz1lb, 14oz
Black pepper1/2 tsp1 Tbsp, 3/4tsp
Water3 1/2cu7 qt, 2 cu
Parsley, raw1 Tbsp, 2/3tsp10 Tbsp
Fennel seed, whole1/4 tsp1 4/5 tsp
Crushed red pepper1/6 tsp1 tsp
Black-eyed peas1 lb, 2 oz9 lb, 6 oz
Turkey ham6 oz3 lb, 2 oz
Salt1/2 tsp1 Tbsp+ 3/4 tsp

Preparation

Place a large pot over medium high heat. Add the oil, chopped onion and chopped celery and cook until translucent. Add the diced carrots, salt, pepper, fennel seed, and crushed red pepper. Cook for 2-3 minutes. Add the black-eyed peas and water and cook for 25-30 minutes. When the peas are soft add in the turkey ham and kale and cook for another 10 minutes until the kale is tender. Adjust seasoning (if necessary) and serve.
