Our Hot Cilantro Lime Pork Wrap, offered as a complete meal, provides a tasty and healthy lunch bundled up in a whole wheat tortilla or choice of breads.  The twist of Cilantro Lime, black beans and rice, and our freshly made salsa make up the mouth watering aroma that fills the halls of the school.  To enhance the taste, we recommend a side of hot sauce and sour cream.

Ingredients

Shredded chedder cheese3oz1lb 9oz
Whole grain brown rice6 cups50 cups
sweet green peppers6oz3lbs 2oz
whole black beans1 1/2 cups3quarts 1/2 cup
salsa fresh homemade1 1/2 cups3qts 1/2 cup

Preparation

Heat cilantro lime pork , black beans and green peppers to 165 and until peppers are soft. Mix in brown rice and cheese making sure all ingredients are mixed together well, when mixed well the mixture looks like you have more pork than rice. Put on your choice of bread items we like the 10 in whole wheat tortilla or the chicken chipolte wrap. Add 1/4 cup salsa to each filling top.

Can be used in your choice of breads wraps and tortilla. Our school district uses a one week schedule to make sure we hit all our nutritional requirements, so this detirmines how we can serve this item in a given week.

If using a tortilla, wrap like a burrito , making sure to tuck the ends in as you go. this will make the wrap tight and keep the ingredients from falling out.

HOMEMADE SALSA:

Fresh tomatoes 2lb 8oz, Red Onions fresh 2lb, fresh cilantro 2oz, lime juice 3 Tbl, and 1 Tbl garlic powder. Chop tomatoes and onions into small chuncks add chopped cilantro mix in lime juice and garlic powder. Can serve same day or hold overnight for more flavor.
