Poppers

Description

A delightful main dish mixture of Brown Rice, Sweet Potatoes, Smoked Deli Turkey  Roll and Cheese encrusted in bread crumbs.  Once baked, you bite into a crunchy crust with melted cheese and the hint of sweet and smokey flavors.   The flavors just make you want to "pop" more into your mouth, hence the name, "Poppers".

Ingredients

Turkey, Smoked USDA processed9 oz.4.75 pounds
Milk, Nonfat, fluid2 Tbsp.1 cup
Cheese, Cheddar Yellow Shredded Commodity.75 cup/3 oz.6 cups/1.5 pounds

Preparation

Mix rice and water in 4 inch full size pan; steam until rice is tender.

Puree sweet potatoes, pepper and milk in food processor. Place in large mixing bowl. Add turkey to food processor; pulse until turkey is chopped to a medium/fine consistency. Place turkey in bowl with potato mixture. Fold in cheese and rice into potatoe mixture until well blended.

Use 1/3 cup or #12 scoop to form poppers. Roll each scooped popper in egg and then in bread crumbs. Place on parchment paper lined baking pan. Bake at 350*F for 30 minutes or until golden brown.

Serve 3 poppers as a serving.
