Description

Zesty and colorful.  Pleasing to the eye and the taste buds.  Juicy diced tomatoes, yellow corn, black beans, and green pepper all mixed together with fresh cilantro and Italian dressing then served with baked tortilla chips create an appetizing, healthful side dish.

Ingredients

Ingredient 6 servings 50 servings
Tomatoes, canned, diced1 cup8 cups
Black beans1 cup8 cups
Corn, canned, whole kernel1/2 cup4 cups
Green bell pepper, chopped1/4 cup 2 cups
Italian salad dressing, reduced fat1/4 cup2 cups
Garlic powder1/4 tsp2 tsp
Cilantro, fresh, chopped1 sprig8 sprigs

Preparation

Drain tomatoes, black beans, and corn. Chop bell pepper. Rinse cilantro. Chop. Mix tomatoes, black beans, corn, green pepper, garlic powder, cilantro, and Italian dressing in a medium sized mixing bowl.

Serve with 1 oz (abt. 9 chips) baked tortilla chips.
