Beefy Barley Stew

Description
Hearty and filling, this stew will satifsy your hunger. Beef and whole grain barley make it tasty as well as nutritious. Celery and carrots add crunch, color and nutrients. Serve as a main dish.

Ingredients

| Beef, ground 90% lean | 6 ozs | 3 lbs |
| Barley, raw | 2/3 cup | 6.25 cups |
| Chili powder | 2.25 tsp | 6.25 tblsp |
| Salt | 1.25 tsp | 9.5 tsp |
| Black Pepper | 0.25 tsp | 3 tsp |
| Celery, raw | 1.5 stalks | 12.5 med. stalks |
| Carrots, raw | 1.5 medium | 12.5 med |
| Pototoes, raw or frozen 2 medium | 1 small | 12.5 small |
| Catsup | 1/4 cup | 2 cups |
| Water | 1 1/3 cups | 12 1/2 |
Preparation
Brown ground beef in 20-quart stock pot. Pare potatoes and cube. Rinse carrots and celery, slice. Drain ground beef. Return to stock pot. Add vegetables and remaining ingredients. Bring to a boil. Reduce heat to a simmer. Cover and cook approximately 45 minutes or until carrots, potatoes, and celery are tender.
Serves 50- 1 cup servings
