Beefy Barley Stew

Hearty and filling, this stew will satifsy your hunger.  Beef and whole grain barley make it tasty as well as nutritious. Celery and carrots add crunch, color and nutrients. Serve as a main dish.

Ingredient 6 servings 50 servings
Beef, ground 90% lean6 ozs3 lbs
Barley, raw2/3 cup6.25 cups
Chili powder2.25 tsp6.25 tblsp
Salt1.25 tsp9.5 tsp
Black Pepper0.25 tsp3 tsp
Celery, raw1.5 stalks12.5 med. stalks
Carrots, raw1.5 medium12.5 med
Pototoes, raw or frozen 2 medium1 small12.5 small
Catsup1/4 cup2 cups
Water1 1/3 cups12 1/2


Brown ground beef in 20-quart stock pot. Pare potatoes and cube. Rinse carrots and celery, slice. Drain ground beef. Return to stock pot. Add vegetables and remaining ingredients. Bring to a boil. Reduce heat to a simmer. Cover and cook approximately 45 minutes or until carrots, potatoes, and celery are tender.
