Description

South of the Border Pizza is a main dish featuring a hearty whole grain pizza shell spread with a sauce of pinto beans, salsa and mexican seasonings and topped with reduced fat cheddar cheese, seasoned chicken and corn, baked until golden brown.  You've never loved beans as much as this before!

Ingredients

Pizza shell, 16" Wheat sheeted dough1 each/27 oz.5 each/135 oz
Beans, pinto, cooked dry beans, whole, without added salt2.5 cup/18 oz12.5 cup/90 oz
Salsa, low sodium, canned (USDA commodity A237)1 cup/8 oz5 cup/40 oz
Taco seasoning mix, mild2+1 tsp10+5 tbsp
Chicken, diced, cooked, IQF, meat only (USDA commodity A517)1.25 cup/10 oz6.25/50 oz
Corn, canned, whole kernel, without added sugar and salt (USDA commodity A110)1/2 cup/4 oz2.5 cup/20 oz
Cheese, cheddar, white, reduced fat, shredded (USDA commodity B028)2 cup/8 oz10 cup/40 oz

Preparation

Preheat oven to 400 degrees.

Place pizza shell on greased 16" pizza pan or baking sheet.

Using a food processor, puree beans, salsa and 2 tsp (10 servings), 10 tsp (50 servings) seasoning mix. Mixture should be smooth and fairly loose. Spread over prepared crust.

Toss remaining 1 tsp (10 servings), 5 tsp (50 servings) seasoning mix with chicken.

Spread cheese over the beans then top with chicken and corn.

Bake about 20 minutes, until crust is browned on the bottom and cheese is melted and golden.

Cut each pizza into 10 equal wedges and serve.
