Wayland's Own "Autumn Vegetable Medley" - It is a colorful, sweet blend of some of the best tasting vegetables - butternut squash, peas, carrots, cranberries, garbanzo beans and apples, topped with melted mozzarella cheese.  So delicious, you'd never know it was good for you too!  Once you've tasted it, you'll be sure to want "Autumn Vegetable Medley" again and again!  It can be served as a main vegetarian and gluten free dish for all to enjoy.

Ingredients

Ingredient 6 servings 50 servings
Carrots, Baby, Raw4 oz. 2 lb.
Onions, Raw4 oz.2 lb.
Celery, Raw4 oz.2 lb.
Oil (Olive or Vegetable)2 oz.2 cups
Squash, Butternut1 1/3 lb.10 lb.
Sage, Grounddash2 tbsp.
Cumindash2 tbsp.
Cinnamon, Grounddash2 tbsp.
Coriander Leaf, Drieddash2 tbsp.
Water, Hot1 1/2 cup3 qts. 2 cups
Peas, Green, Frozen6 oz.3 lb.
Cranberries, Dried4 oz.2 lb.
Apples, Canned, Sliced4 oz.2 lb.
Beans, Garbanzo, Canned2 lb.2 #10 cans
Cheese, Mozzarella, Part Skim Milk5 oz.3 lb.

Preparation

Heat Pan and add Oil, Saute Carrots, Onions and Celery, Cook for 10 minutes.

Add Butternut Squash and Water, Add seasonings to taste, Bring to boil and simmer for 20 minutes.

Add Apples, Dried Cranberries, Peas and Garbanzo Beans, Cook for 10 Minutes, CCP: Heat to an internal temperature of 140 degrees.

Adjust seasonings, place in hotel pan, top with Shredded Mozzarella Cheese, Bake at 375 degrees until cheese is melted. Ready to serve. CCP: Hold at 140 degrees.
