Ingredients

| Onions, Raw | 4 oz. | 2 lb. |
| Celery, Raw | 4 oz. | 2 lb. |
| Oil (Olive or Vegetable) | 2 oz. | 2 cups |
| Squash, Butternut | 1 1/3 lb. | 10 lb. |
| Sage, Ground | dash | 2 tbsp. |
| Cumin | dash | 2 tbsp. |
| Cinnamon, Ground | dash | 2 tbsp. |
| Coriander Leaf, Dried | dash | 2 tbsp. |
| Water, Hot | 1 1/2 cup | 3 qts. 2 cups |
| Peas, Green, Frozen | 6 oz. | 3 lb. |
| Cranberries, Dried | 4 oz. | 2 lb. |
| Apples, Canned, Sliced | 4 oz. | 2 lb. |
| Beans, Garbanzo, Canned | 2 lb. | 2 #10 cans |
| Cheese, Mozzarella, Part Skim Milk | 5 oz. | 3 lb. |
Preparation
Heat Pan and add Oil, Saute Carrots, Onions and Celery, Cook for 10 minutes.
Add Butternut Squash and Water, Add seasonings to taste, Bring to boil and simmer for 20 minutes.
Add Apples, Dried Cranberries, Peas and Garbanzo Beans, Cook for 10 Minutes, CCP: Heat to an internal temperature of 140 degrees.
Adjust seasonings, place in hotel pan, top with Shredded Mozzarella Cheese, Bake at 375 degrees until cheese is melted. Ready to serve. CCP: Hold at 140 degrees.
