Description

This bar is filling and full of energy. It contains 100% whole grains, two kinds of seeds, applesauce, grated carrots, molasses and honey. It has lots of protein, is chewy, moist and very satisfying. Cinnamon and ginger help it taste sweet, and the honey preserves its freshness. It can be a side dish or part of a very tasty breakfast.

Ingredients

Molasses, blackstrap2 tsp1/4 cup
Honey1 tbsp1/2 cup
Sugar, granulated2 tsp1 1/2 cups/12 oz

Applesauce, canned, unsweetened2/3 cup/4 oz4 cups/32 oz
Carrots, raw, grated1/2 cup2 cups
Whole wheat pastry flour3/4 cup/4.5 oz7 cups/36.75 oz
Baking soda1/8 tsp1 tsp
Cinnamon, ground1/4 tsp2 tsp
Ginger, ground1/4 tsp2 tsp
Seasame seeds, unhulled2 tbsp1 1/3 cups
Sunflower seeds, dry roasted1 1/2 tbsp1 cup

Preparation

Cream softened butter with oil, sugar, honey and molasses. Add eggs, two at a time, mixing after each addition. Mix in grated carrots. Mix in apple sauce. Mix together all dry ingredients: whole wheat pastry flour, baking soda, spices. Add these to butter mixture and stir well. Add seeds and oats, mix well. For 50 servings, spread into two, oiled, half sheet pans (12"X17"), bake at 350 degrees 20-25 minutes or until knife comes out clean. Cut each pan into 25 rectangles. For 6 servings, spread batter in oiled 9" pie plate, bake as above and cut into 6 wedges, as for pie.
