Description
The Spicy Maple Barley Mix is a sweet and spicy mix of whole grains and dried fruits that tantalize your senses. The sweetness of the dried apricots, apples, and cranberries blend perfectly with the toasted almonds, barley and chopped parsley. The maple syrup and white balsamic vinegar provide additional sweetness with just the perfect amount of tartness. The cayenne pepper provides that spicy kick that brings everything together.

Preparation
In large saucepan, bring water to boil and stir in barley, reduce heat and cover. Simmer 10-12 minutes or until tender. Pour in colander and rinse thoroughly with cold water and allow all water to drain. Transfer barley to large mixing bowl.
Toast almonds at 350 degrees for 7-10 minutes or until almonds are golden brown and allow to cool. When almonds have reached room temperature, add to bowl of barley.
Chop the apricots and dried apples into tiny, bite sized pieces and add with cranberries to the bowl of barley.
Chop parsley and add to bowl of barley.
In a separate mixing bowl, stir together maple syrup and white balsamic vinegar. Slowly whisk in the canola oil until combined. Add cayenne and stir to combine (adjust cayenne as needed). Add mixture to bowl of barley and stir until fully incorporated.
Chill and serve cold
