Rocking Red Beans

Our red beans rock! Beans are a healthy addition to any diet and these red beans are a terrific side dish or could move to center stage as a main dish bean entrée.  Simmered in beef broth and a hint of garlic and onion, these beans are a kid favorite.

Ingredients

Ingredient 6 servings 50 servings
Red beans, canned, drained1 3/4 cup3qts+2.5cup
Beef broth,from dry base1/3 cup3 cups
Salt, table1/8 tsp1/2 tbl
Pepper, black1/4 tsp2 tsp
Garlic powder1/2 tsp1tbl+1tsp
Onion powder1/2 tsp1tbl+1tsp
Paprikapinch1/2 tsp

Preparation
  1. Drain red beans in a collander, but do not wash.

  2. Transfer beans to a steamtable pan (12" X 20" X 4"). For 50, 1/4 cup servings, use 1 pan.

  3. Add beef stock, salt, black pepper, garlic powder, onion powder, and paprika. Stir until thoroughly combined.

  4. Cook covered in a steamer for approximately 20-25 minutes until reaches an internal temperature of 165° .

  5. Serve at 135° or higher.

CCP: Heat to 165 degrees or higher for at least 15 seconds.

CCP: Hold at 135 degrees or higher.

For six servings:

Mix all ingredients together in a small saucepan. Bring to a low simmer and cook for 10-15 minutes until all flavors blends well.
