Description

Granola yum-yum bars are a great grab and go breakfast item, brimming with healthy oats and sprinkled with mini-chocolate chips. Crunchy and slightly sweet, these yum-yum bars are loved by kids of all ages. The yum-yum bars can also be a healthy treat with a school lunch or field trip menu.

Ingredients

Ingredient 6 servings 50 servings
Oatmeal,quick oats1 3/4 cup4 qt/2 lb 13 oz
Chocolate chips,semisweet mini3 tbl1 1/2 cup/9 oz
Water1tbl+1tsp3/4 cup
Oil, canola2tbl+1.5tsp1 1/3 cup
Sugar,light brown,packed1/2 cup3 1/2 cup/1 lb 10 oz
Vanilla extract3/4 tsp2 tbl
Salt,table1/4 tsp2 tsp

Preparation
  1. In a large bowl, add rolled oats and chocolate chips. Mix until thoroughly combined.

  2. In another bowl, mix water, oil, brown sugar, vanilla and salt until thoroughly combined and the oil is not separated from the mixture.

  3. Add the liquid to the oats using a rubber spatula to ensure all the liquid is used. Mix thoroughly (the liquid will be absorbed and the oats will become darker and shinier).

Note: All raw oats must be "coated" with the liquid for proper binding of the granola bar.

  1. Spread the granola mixture out on a well-coated 18" X 26" sheet pan using a spray pan release, firmly pressing oats into an even single layer.

HINT:
A sheet of parchment paper on top of the granola mixture and a rolling pin is ideal for this step. (OR) A sheet of parchment paper on top of the granola mixture and another sheet pan on top of the parchment paper to apply even pressure to the mixture can also be used.

  1. Bake at 275 degrees in a convection oven with the fan on low according to the chart below:

1 pan 275 degrees 36 minutes,Turn in 18 minutes and continue cooking

2-3 pans 275 degrees 38 minutes,Turn in 19 minutes and continue cooking

4-5 pans 275 degrees 42 minutes,Turn in 21 minutes and continue cooking

  1. Remove from the oven and allow to cool for 35 minutes on a bakers rack before cutting with a sharp knife. Cut 5 x 10 to yield 50 servings per sheet pan. Continue to cool for an additional 20 minutes before serving.

Note: Cut bars on the same day of production. The granola bars are much easier to cut.

For six servings:

Divide evenly into a 6 serving muffin tin. Bake at 275 degrees until the oatmeal yum-yum rounds are dried. Enjoy!
