Cocoa Lover's Quick Bread is a delicious hearty bread that is the perfect side dish to any heavy meat such as pork or beef. The hint of cocoa and moist texture hide the fiber rich black beans that are the core of the bread. This bread will leave your lips smacking and your heart happy.

Baking powder1/4 tsp + 1/8 tsp2 1/2 tsp

  1.  Pre-heat oven to 350˚F. Spray an 8 1/2” x 4 1/2” x 2 1/2" loaf pan for the 6 yield recipe and five 9" x 5" x 3" loaf pans for the 50 yield recipe with cooking spray.
  2.  Combine black beans, applesauce, yogurt, and vanilla in a food processor. Blend until black beans are pureed and mixture is homogenized.
  3.  In a separate bowl, combine flour, cocoa, baking powder, baking soda, and brown sugar. Stir to combine.
  4.  Add dry mixture to the food processor and mix until well combined.
  5.  Spoon black bean mixture into a bowl.
  6.  Add egg and egg white to a bowl. Gently beat the eggs and then fold eggs into the mixture.
  7.  Fold in mini-chocolate chips.
  8.  Pour mixture into pan and bake for 45-50 minutes for both the 6 and 50 yield recipes. Bread should be done in the center.
  9. Allow to cool completely before cutting.
