Preparation
Directions:
Pre-heat oven to 350˚F. Spray an 8 1/2” x 4 1/2” x 2 1/2" loaf pan for the 6 yield recipe and five 9" x 5" x 3" loaf pans for the 50 yield recipe with cooking spray.Combine black beans, applesauce, yogurt, and vanilla in a food processor. Blend until black beans are pureed and mixture is homogenized.In a separate bowl, combine flour, cocoa, baking powder, baking soda, and brown sugar. Stir to combine.Add dry mixture to the food processor and mix until well combined.Spoon black bean mixture into a bowl.Add egg and egg white to a bowl. Gently beat the eggs and then fold eggs into the mixture.Fold in mini-chocolate chips.Pour mixture into pan and bake for 45-50 minutes for both the 6 and 50 yield recipes. Bread should be done in the center.Allow to cool completely before cutting.
