Healthy Mediterranean style side salad perfect with lunch or dinner.

Fresh cold salad with Garbanzo beans, fresh herbs, fresh red onions and bell peppers tossed with olive oil.

Garbanzo Beans1 pint/8.21 oz10 1/2 cups/68.4 oz
Red Onion (diced)1/2 cup/2.88 oz4 2/3 cups/1.5 lb
Green Bell Pepper (diced)1/2 cup/2.88 oz4 1/2 cups/1.5 lbs
Fresh Cilantro1/4 cup/5.5 grams2 cups/8.5 oz
Olive Oil2 Tbsp/.85 oz1 cup/7 oz
Red Wine Vinager2 tsp/9.5 grams1/3 cup/2.75 oz
Dried Oregano1/4 tsp/dash2 tsp/1 gram
Black Pepper1/4 tsp/dash2 tsp/1 gram

Preparation

Drain Garbanzo beans.

Combine Garbanzo beans, red onions, green bell peppers and Cilantro; mix thoroughly.

In blender, combine olive oil, red wine vinager, oregano and black pepper for dressing until emulsified.

Finally, toss dressing with bean mixture until well coated. Serve chilled (below 40 degrees).
