Warm your insides on those chilly fall days with this delicious, healthy meal. Our Harvest Chili is made from hearty pumpkin, aromatic spices, and a variety of beans. Loaded with fiber and protein, this dish has been taste tested by children of all ages and declared “Yummy!” Perhaps the best part of this dish is that it is a vegetarian dish, but with the options of adding cooked ground turkey or pork to it if desired. This tasty meal will satisfy your appetite and warm your soul! Great for eating with family and friends after spending a fall day outdoors! Yum!

Preparation
Begin by putting vegetable stock and pumpkin in 8.5 quart pot for 6 servings and in 2 12 quart pots for 50 servings over medium heat and mix together. Then take all the Great Northern White beans drain and the put in food processor and puree them. Add pureed beans to pot. Drain Navy beans and Black beans and add them to the pot and stir everything together. Finally add all the spices and mix until everything is stirred in. Bring to a boil and let simmer for at least a half hour. Chili will thicken a little as it stands. Serve and add any additional ingredients such as ground turkey or pork.
