Description
Fresh local Indiana vegetables that are pan roasted to enhance the sweet flavors of the carrots and the nuttiness of the edamame and zucchini. This is to be used as a side dish.

Ingredients

| Fresh Carrots | 2 cups | - |
| Fresh Green Zucchini | 1 cup | - |
| Edamame Shelled | 1/2cup | - |
| Vegetable base low sodium | 2 TSP | - |
| Brown Sugar | 1TSP | - |
| Fresh Chopped Parsley | 1TBSP | - |
| Fresh Chopped Sage | 1TBSP | - |
Preparation
2 cups Carrots- peeled, sliced on bias
1 cup Zucchini- medium diced
½ cup Edamame shelled - blanched, liquid reserved
2 Teaspoons Vegetable Base dry
2 Teaspoons Brown Sugar
1 Tablespoon Italian Parsley- chopped
1 Tablespoon Sage- chopped
Blanch vegetables and drain well. Put on a sheet pan and spray vegetables with fat free vegetable cooking spray and roast for 15 minutes at 350 degrees. Then add brown sugar and cook for 3 more minutes. Toss in herbs to cook thru.
