Ingredients

| Olive Oil | 1.5 oz. | 12 oz. |
| Cajun Seasoning | 1/8 oz. | 1 oz. |
| Black Pepper | 3/8 tsp. | 1 TBSP |
| Long Grain Brown Rice | 1.75 CUPS & 2.5 TBSP | 4 QT |
| Paprika | 1 3/8 TSP. | 4TBSP |
| French Dressing Reduced Fat | 1 TBSP 2.75 TSP. | 1 CUP |
| Hot Pepper Sauce | 1 3/8 TSP. | 1/4 CUP |
| Diced Green Peppers | 1/8 oz. | 1 oz. |
| Chopped Red Peppers | 1/8 oz. | 1 oz. |
| Salsa (Commodity) | 3/8 tsp. | 1 TBSP |
Preparation
Drain blackeyed peas. Mix cooked brown rice with blackeyed peas and place in mixer with paddle add seasonings. Mix until blended. Form patties with a # 8 scoop onto a sheet pan greased with olive oil. Place patties ina hot oven at 400 degrees. Cook until browned on one side and turn patties with a spatula. Cook until browned on other side. Cook to an internal temperature of 165 degrees for 15 seconds.
Mix sauces and diced peppers. Serve 2 Tablespoons Kickin Sauce over each pattie.
