Description

This hearty main dish has lots of southwest flavor with the addition of such ingredients as flame roasted corn and black beans, and ground turkey.  The multi grain pasta and low fat cheesess sneak it a boost of nutrition too.

Preparation

Preheat oven to 350 degrees. Bring a large pot of water to a boil over high heat, add pasta and cook for 10-15 minutes according to package directions. Drain and rinse pasta. Heat olive and 1/2 canola oil over medium heat in a large saute pan. Add garlic and saute for one - two minutes, add ground turkey and cook for approximately 5 minutes until browned. Remove from saute pan and keep warm. Melt butter and 1/2 canola oil in a saucepan over medium heat. Whisk in flour until smooth and cook for approximately 3 minutes or until mixture starts to brown. Whisk in milk and bring to boil. Reduce heat to low and mix in pepper Jack and low fat Cheddar cheeses. Heat for approximately 5 minutes or until cheese is melted and mixture is smooth. In a large mixing bowl, combine the pata, cheese sauce, turkey sausage and flame roasted corn and black beans and mix until well combined. Add salt and pepper (to taste). Pour mixture in hotel pan and place in oven. Cook for approximately 30 minutes until hot and bubbly. Remove from oven and serve immediately.
