Delicious, spicy roasted fresh carrots, loaded with flavor and topped with fresh cilantro. One bite will leave you wanting more.

lemon juice.25 tsp2.08 tsp
lime juice.25 tsp2.08 tsp
orange juice.25 tsp2.08 tsp
salt.24 tsp2.0 tsp
pepper.12 tsp1.0 tsp
curry powder.06 tsp.5 tsp
paprika.06 tsp.5 tsp
onion powder.12 tsp1.0 tsp
garlic powder.24 tsp2.0 tsp
cilantro, fresh.24 TBSP2.0 TBSP
chili powder.06 tsp.5 tsp
oregano, dried.25 TBSP2.0 TBSP

cooking spray (as needed)--

Preparation

Peel, wash and cut the carrots into quarter inch slices Add the cut carrots to a large bowl. Add the juice's, oil and all the spices except the fresh cilantro. Reserve for later. Mix well. Spray the sheet pan(s) (half sheet pan for 6 servings ) with cooking spray and add the seasoned carrots in even layers, to the pan(s). Roast in a pre-heated 350 degree F oven for about 20 minutes. Garnish with the reserved fresh cilantro. You may add a garnish of fresh slices of citrus if desired
