Soar like an eagle when you choose this yummy main dish! This wholesome crowd pleaser combines some of kids’ all time favorite foods, pizza and tacos.
With whole grain tostada shells, refried beans, shredded cheese and a stack of colorful veggies, Eagle Pizza will have all the students saying “Yes, please!” in the lunch line. These pizzas feature fat free refried beans as their main source of protein, giving kids the power and energy they need for a busy day! This recipe can easily be made for a few or an entire school, making it very versatile. Eagle Pizzas are a yummy addition to any cafeteria’s arsenal.

|Tostada shells||6 /2.25 oz||50 /1.17 lb|
|Bell pepper, chopped||3/4 c/3.94 oz||6 1/4 c/2 lb|
|Onion, chopped||3/4 c/4.23 oz||6 1/4 c/2.20 lb|
|Corn, no salt added, drained and rinsed||3/4 c/6.61 oz||6 1/4 c/3.44 lb|
|Mexican cheese blend, shredded, reduced fat||3/4 c/2.96 oz||6 1/4 c/1.54 lb|
|Spinach/Romaine lettuce blend, shredded||3/4 c/1.24 oz||6 1/4 c/10.33 oz|
|Carrots, shredded or matchstick||3/4 c/2.91 oz||6 1/4 c/1.51 lb|
|Salsa||1/3 c/2.91 oz||2 3/4 c/1.51 lb|
|Sour cream, fat free||1/3 c/3.10 oz||2 3/4 c/1.61 lb|
PREHEAT oven to 350°F. In a bowl, MIX taco seasoning* and beans together. SPREAD ¼ c of beans on each tostada. In a large sauté pan, SAUTE’ bell pepper, onion and corn until heated through. SPRINKLE vegetable mixture on each tostada (about ⅓ c on each). TOP tostadas with 2 T of cheese. PLACE tostadas on a baking sheet and BAKE until cheese is melted, about 2 minutes. REMOVE tostadas from the oven and PLACE on a plate. TOP each tostada with 2 T of lettuce, 2 T of carrots and TOP with salsa and sour cream. SERVE and ENJOY!
